Checking the Water Bath Temperature

I use an instant thermometer to insure the water bath is at the correct temperature.  The difference of only one to two degrees can dramatically change the outcome of a dish. 

I had the misfortune of ruining a steak when I increased the temperature from 130 degrees to 135 degrees.  It was not medium rare!  If the temperature of the water bath is not set for the correct temperature it will effect the cooking times.  If the temperature is lower then it should be the result is undercooked food.
