Cooking with Alcohol

I have found when incorporating a wine sauce in a recipe that you need to cook the sauce first.  This will dissipate the alcohol and the taste will not be overpowering.  Always cool your sauces before using in a dish so that the food will not cook from the heat of the sauce.
