Dessert Gnocchi in Brown Sugar Pecan Sauce


Ingredients:

1 large sweet potato

1 medium sweet potato

1 egg yolk

1 1/2 cups flour

8 tablespoons butter

1/3 cup brown sugar

1 1/2 tablespoons pumpkin pie spice

1/2 cup whipped cream, for garnish

1/2 cup pecans, toasted

 

Instructions:

Preheat a water bath to 185°.

 

Peel the sweet potatoes and cut into 1 inch cubes.  Place into a large bag.  Remove the air and seal.  Place in the water bath for two hours.

 

Remove the potatoes from the bag and mash in a large bowl.  Allow the potatoes to cool.  The sweet potatoes should yield two cups mashed.  Add the flour to the potatoes and mix well.  Add the egg yolk and mix well.    Pour out  a portion of the contents unto a floured board.  Knead the dough and add flour as needed until the dough is no longer sticky.  Doing this in batches is the easiest way to do this.  Roll out dough into cylinders one inch thickness.  Cut into 1/2 inch pieces.  Place onto a baking sheet.

 

Bring a large pot of water to a slow simmer.  Add some of the gnocchi (do not crowd- do this in two batches) to the simmering water. Place two tablespoons of butter into a large skillet and heat over medium heat.  When the gnocchi float to the top of the simmering pot remove them with a slotted spoon and put them into the large skillet.  Sprinkle 1/2 of the pumpkin pie spice on the gnocchi.  Brown the gnocchi and remove to a plate and place in the oven to keep warm while you repeat the process with the second batch.  Repeat the process with the remaining gnocchi and two tablespoons of butter.   Place onto the plate to keep warm while preparing the sauce.

 

Over low heat, add the remaining four tablespoons of the butter to the skillet.  Add the brown sugar and stir until the sugar has completely melted into the butter.  Plate the gnocchi and pour the sauce on top of each serving.  Garnish with the toasted pecans and top with the whipped cream. 

 

Recipe Notes:

For the calorie and health conscious-replace the butter with a heart healthy butter replacement.
