The Garlic Ginger Fish with Shitake Mushroom Soy Glaze represents the best flavors of Asian cuisine.  The delicate flaky fish takes on the subtle notes of the ginger and garlic.  The meaty texture of the shitake mushrooms wonderfully contrasts the lightness of the fish.  The soy glaze sauce mingled with the scallions adds dimension and another layer of flavor.  Serve this with the Asparagus (page 167) as a companion and a light salad to complete this delicious Asian inspired meal.
