GF Chocolate Truffle Cake

Makes three 6” round layers

 

10 ounces unsalted butter such as Plugra

10 ounces bittersweet chocolate 70% or close to, Callebaut is my favorite

6 large eggs

6 egg yolks

1 cup granulated sugar

2/3 cup GF flour of your choice (I like a mixture of tapioca, Bob’s Red Mill baking mix and C for C by Thomas Keller)

 

Instructions

 

Preheat oven to 350 degrees

Melt butter and chocolate over a double boiler

Beat eggs, yolks and sugar on high speed until tripled in volume

Stir GF flour into chocolate mixture

Fold chocolate mixture into egg mixture by hand

Divide between greased and parchment lined 6” pans

Bake for 20-25 minutes or until a pick inserted off center comes out with just a few moist crumbs clinging to it

Cool before frosting
