How to Get the Crispy Skin on Poultry

If you enjoy crispy skin ( Yum Yum ) on sous vide chicken, turkey, etc., remove the skin and place between two  pieces of aluminum foil which have been sprayed with cooking spray.  Place on a baking sheet.  Preheat the oven to 400 degrees.  Place the baking sheet in the oven and weigh down with an oven proof skillet.  Cook for approximately 20 to 30 minutes or until skin has browned.  Serve the delicous crispiness on top of your fabulous chicken!!!
