Sweet Potatoes with Peach Preserves

 

2 medium sweet potatoes, 1/2 inch cubes

1/3 cup peach preserve

2 tablespoons dark brown sugar

1 tablespoon lemon zest

2 tablespoons lemon juice

1/4 teaspoon ground ginger

1 tablespoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup gingersnap, crumbled

1 8 x 10 dish

 

Instructions

Heat a water bath to 189°.

In a large mixing bowl combine all of the ingredients except the ginger snaps.  Mix well.  Pour into a 8 x 10 dish.  Place the dish in a large bag. Remove the air and seal.  Place in the water bath for a minimum of two hours.

Remove the dish from the bag.  Use a potato masher to mash the sweet potatoes.  Add the crumbled ginger snaps on top and serve.
