Vegetables in Harissa Butter w/ Feta

 

Ingredients:

2 large golden beets, 1/2 inch cubes

1 cup baby carrots

1 tablespoon harissa paste

6 tablespoons butter, softened

40 mandarin orange sections

1/2 cup feta cheese, cubed

 

 

Instructions:

Heat a water bath to 185°.

 

Mix the harissa paste in with the softened butter.  Place the beets and carrots into a large bag.  Spoon the softened harissa/butter on top of the vegetables.  Remove the air from the bag and seal.  Place in the water bath for two hours.

 

Remove the bag from the water and plate onto four plates.  Top with 10 slices of mandarin oranges on each plate.  Sprinkle the cubed feta on top of each plate.  Serve.
